Armenian Ichli – Kufta Recipe.

Today, my grandmother taught my girls and I her “Ichli-Kufta” ( Armenian Meatballs) recipe and I’m sharing it on my blog with you.
For the filling
- 1 lb. ground beef or lamb
- 1 large yellow onions, chopped
- 1 tsp. paprika
- 1/2 tsp. salt
For the shell
- 1 1/2 lbs. ground lamb
- 3/4 cup fine bulgur (#1)
- 1 table spoon red pepper paste
- salt to taste
Step 1: Prepare the filling by browning the ground meat until browned. Add the onions and cook together for 1/2 hour. Add chopped onions for an additional 10 minutes. Add the paprika and salt stir.
Step 2: When preparing (geyma) shell, get a big bowl add bulgur, salt ( to your taste), red pepper paste and paprika.|
Step 3: First get a bowl, add 2 cups bulgur, 1/2 table spoon salt, 1 large table spoon red pepper paste, 1 table spoon paprika. Mix it with hands. I usually mix it with gloves on. When you notice the ingredients are blended add chi-kyofta (grounded meat) and continue to mix for another 10 minutes or so until you notice the mixture well blended.
Step4: Take a little bit of the mixture make a hollow hole inside and fill the center with the filling, cooked ground meat. Cover up with the shell until you have a ball. Should the shel crack tap it with a moist hand and try to blend the cracks. Continue repeating this process until all the meatballs are made.
Step 5: Enjoy!
Tip: As you prepare the chi-kufta shell, always dab your hand in the water before creating the shell and covering it with the mixture to add moisture and create the perfect round kufta.
